Cheeseburger in Paradise
We experienced another great Jimmy Buffett concert a few weeks ago. Every year we fear it's the last so we try to soak it all in while we're there.
This year, my tailgate contribution was Cheeseburger Cupcakes! They were pretty simple to make and they were delicious!
I made a batch of Martha's Vanilla Buttermilk Cupcakes (a box mix works just as well) and a pan of regular box brownies and a recipe of Cream Cheese Frosting.
I baked the cupcakes and split them in half for buns.
I used a water glass to cut round "burgers" from the pan of brownies.
I divided the frosting into 3 bowls and tinted them red, yellow, and green using super strong Wilton food coloring.
When it's time to assemble, place the brownie "burger" onto the bottom cupcake "bun", squeeze out frosting "ketchup", "mustard", and "lettuce" from the cut corner of a ziploc baggie, then place the top "bun" on top. You can sprinkle with sesame seeds for some realism.

I Tricked my Printer
I have a Brother HL 2240 printer that I have really liked over the last year or so. The only thing that kills me is the cost of the toner refills ($55, Staples?? Really??). For some reason, I get one warning (sometimes no warning) and suddenly my printer stops printing and the "refill toner" light blinks.
Wait a minute, the pages just before this warning looked fine! How can it run out all at once like that? I smell a rat...
I snooped around online (you KNOW how I love to use the Google machine) and came up with some tips to trick my printer into printing more pages.
Here is the toner snapped into the housing that slides into the front of the machine:
Here it is removed from the housing (why is the photo upside down?)
Pop everything back in place and replace to the front of the printer then press "Go" 7 times (I know it sounds silly, but the "go" part is super important!)
Sit back and print, print, print...
**I'm on about 20 pages so far since I tricked my printer. I'll try to keep track!

Day Trippin' to Water Island, USVI
Water Island is a must-see when you are visiting St. Thomas USVI. A quick $7 ferry ride that picks up in American Yacht Harbor gets you over there lickety-split!
Call up Kelly's Carts before you leave to have a golf cart waiting for you when you arrive (340-643-4128). Best $50 you'll spend.
We explored a WWII bunker:
Ate lionfish tacos and drank Creamy Dinghy's and Red Stripes on Honeymoon Beach at Dinghy's Bar (kind of a glorified food truck in a primo location on the sand.
I got the kids to pose for some Christmas card pictures with all the moored sailboats in the background. Just look at that water, people!
During our island exploring, we went off road and hiked a washed out trail down to Limestone Bay:
Beautiful, deserted beach...
Lots of things wash up on this beach, among them are shoes. So, here you will find "The Tree of Soles" where explorers hang their finds:
The beach to the right is made up of big chunks of washed up coral, and visitors stack up cairns to leave their mark on this deserted beach:
Here is ours and some others along the shore:
